魚沼地方は昔から麻織物の産地です。麻織物の材料である青苧（あおそ）と布海苔をつなぎとして使って打つお蕎麦は普通のお蕎麦とは一味違った味わいです。湯沢町産100％の蕎麦粉を使って打ち立てのお蕎麦をお楽しみください。
タイミングが良ければ石臼でそば粉を引いているところを見れるかもしれませんよ！

We can arrange a buckwheat noodle making experience at Kobo Daigenta, overlooking Mt Daigenta.
The Uonuma region has long been a centre of hemp weaving. The buckwheat noodles are made using Aoso (ramie) and Nunonori (laver) as a binder, which gives them a different taste from ordinary buckwheat noodles. Enjoy freshly made buckwheat noodles using 100% Yuzawamachi buckwheat flour.
If your timing is good, you may even be able to see the buckwheat flour being prepared on a millstone!

Access: local buses are available from bus stop No. 2 (Yuzawa-Asahibara line) at the east exit of Echigo Yuzawa Station. *Buses to Daigenta are only available on weekdays. Please use a car or taxi if you wish to go towards Daigenta on weekends and public holidays. Taxis cost around 4,200 yen one way from Echigo Yuzawa Station.
